What you’ll need:
– Chicken drumsticks
– BBQ sauce
– Favorite seasoning
BBQ sauce mixture: Add your favorite BBQ sauce (about a cup and a half, with a tablespoon of honey, a dash of seasoning and splash of apple juice. Mix and let set – you will throw this on the smoker to warm shortly.
To prep these lollipops, you may want to put on some rubber gloves and sharpen your knife. You’ll want to cut around the base of the drumstick and pull any and all skin/tendons off of the knuckle completely. This will take some elbow grease, but it’s worth the reward.
Once you have all the skin pulled off, push down on the remaining meat to form what looks like a lollipop. The end that is now just bone, wrap in foil to prevent burning.
Set your smoker to smoke for 5 minutes with the lid open, then set to 300 and close your lid to get to temperature.
Season your chicken generously with your favorite seasoning, I used BBQ Guys x Spiceology Kansas City Rub on these (HIGHLY recommend this rub!). Now it’s time for BACON! I cut my bacon strips in half and wrapped the best I could and held together with a tooth pick. Once these were all wrapped up, I then seasoned the bacon lightly with more seasoning.
Throw your chicken on the smoker for roughly 45 minutes or until the internal temp is 165. Once to temperature, set your smoke to “smoke” and put your BBQ sauce mixture in the smoker to heat up for roughly 5 minutes.
Once the sauce is warm, dip your lollipops into the mixture and coat evenly, keep on the smoker for another 5 minutes on smoke to thicken up the sauce and get it sticky.
Pull your lollipops off and garnish with some parsley and dig in!
