Pork Belly Burnt Ends (LOW CARB + KETO)

One of my favorite recipes! I purchased my Pork Belly from Costco – usually comes with 6 strips per pack. I will divide it in half and freeze separately. This recipe uses 3 strips of Pork Belly.

What you’ll need:

  • Pork Belly
  • Smokey Seasoning (I Use Maynards Memphis Seasoning + XXX Garlic from Miners Mix)
  • Tin Pan
  • Your favorite BBQ Sauce – I prefer a sweet + smokey flavor (use sugar free if doing low carb/keto)
  • Apple juice, Canada dry or some sort of sweet liquid to spray (if doing Keto, sub for diet Canada Dry or diet Sprite, etc)
  • Smoker
    – As for pellets, I generally use a mixture of the Traeger Signature Blend and Jack Daniels pellets, or Jim Beam pellets. The whiskey/bourbon blends add a little extra flavor.

Turn your smoker to 275F for a good 10-15 minutes with the lid closed.

Start by cutting your pork belly into cubes, I will have the pork belly horizontal on the cutting board, cutting vertically first then cut those in half. horizontally. You can see by my photos above.

Once cut, place into a tin pan and coat heavily with your favorite smokey (and spicy if that’s what you’re into) rub. Fully coat all sides of every piece. I prefer to have these marinate overnight, but you do not need to do this.

Once coated and your smoker is to temperature, place the pieces of pork belly directly onto the grill. These will stay in the smoker at this temperature for the next 2 and a half hours.

Spray the pork belly every 45 minutes or so they do not dry out.

After 2 and a half hours, pull the pork belly off of the smoker and put into your cleaned tin pan. Coat again with your seasoning and with your favorite BBQ sauce.

Once well seasoned and well coated with BBQ sauce, place back into the smoker in the tin pan for another 45 minutes to an hour at 275F, mixing carefully once or twice to prevent any sticking. If you notice they are drying out, spray again with your sweet liquid. The goal is to have these completely soak up and caramelized in the BBQ sauce.

After they have carmalized in the BBQ sauce, carefully pull off the smoker and ENJOY!

But be careful, they will be HOT (in temp) and very addicting!
